Banana Bread.

J loves banana bread and when there are super ripe bananas sitting on the counter, I'm happy to make it for him. The recipe below made three loaves and before the night was over two of them were gone (I sent one home with Heidi - so we weren't too gluttonous).

Banana Bread
.
1 cup sugar
1/4 cup shortening
2 eggs
3 bananas, mashed
2 cups flour
pinch of salt
1/2 teaspoon baking soda
1/2 cup sour cream

01. Cream shortening, sugar and eggs.
02. Add bananas and cream.
03. Sift dry ingredients (I'm too impatient for this step) and cream with wet ingredients
04. Add sour cream.
05. Put into greased and floured bread pans (3 minis worked for me)
06. Bake at 325 degrees for about 1 hour
07. Remove to cooling rack
08. Cut and enjoy (isn't it so much better warm?)
